I've always loved cooking since I first properly cooked for myself at uni but these days, as a busy mum with 3 growing boys, I no longer have hours to spend creating elaborate feasts. But I still want to eat well! And of course, keep us all fit and healthy too. And I'm no stranger to that sinking feeling that yes, they do need feeding again tonight.

I've got loads of ideas I want to share with you - tasty, healthy recipes you can cook tonight. I tend to base my recipes around the principles of a Mediterranean diet, which seems like a good place to start for the majority of us. Plenty of veg and fruit. Lean protein. Moderate amounts of complex carbs, dairy, healthy fats. No fads. No gimmicks. No rules. Nothing excluded or banned. Treats definitely allowed!
