A tasty update on the classic fish finger sandwich
Not my best ever photo, these wraps were really difficult to photograph! But thankfully very easy to throw together after a loooong week. We all love a fish finger sandwich in our house!
But I fancied something slightly different and, inspired by an idea I saw on the Waitrose website, I grilled the fish fingers as normal and served them in tortilla wraps, with a pea purée (frozen peas whizzed up with lemon juice, salt and pepper), a quick homemade tartare(ish) sauce of mayo and chopped capers, and green salad (little gem, spinach and cucumber)
I just stuck everything on the table and let everyone build their own in tortilla wraps. So easy! Have a great weekend everyone.
