Black bean wraps

A quick healthy vegetarian wrap


Today’s lunch was a speedy bean & salsa wrap.
I stuffed my wrap with shredded little gem topped with tinned black beans, tinned sweetcorn, shop bought tomato salsa and chopped coriander. I went with what we had in but you could also ring the changes with cooked chicken or grated cheese or avocado if you fancied it. And I used bought salsa for ease but of course do make your own if you want. It was blooming delicious even if I do say so myself - fresh, tasty and surprisingly filling 😊

The kids had a simpler version in their packed lunches with just beans, sweetcorn and salsa. I must admit I do struggle a bit to come up with quick healthy packed lunch ideas for the child who hates sandwiches but he loves this - result!
