Chicken fajitas are a healthy fun family dinner

Not particularly groundbreaking but a huge crowd pleaser in our house and a very sociable family meal for a Saturday or Sunday night. Work commitments mean it's hard for us to all eat together during the week, so weekend meals are pretty important to us. Admittedly, it's a lot more relaxing since the children have been old enough to build their own fajitas! Kids seem to enjoy having the autonomy of adding their own toppings and none of us eat our fajitas in quite the same way. 😊
The spice mix is very easy to make and the black beans really do add flavour and texture (even though they were originally added in a whoops that doesn't look like enough chicken moment!) I sometimes also make a vegetarian version of this, using 2-3 tins of beans and obviously leaving out the chicken - kidney or pinto beans work really well for this.

How do you like to eat your fajitas?

Serves 4

Ingredients: 

2 tsp ground cumin
1 tsp chilli powder (hot or medium as you prefer)
1 tsp paprika
6 boneless chicken thighs, cut into finger width strips
1 onion, sliced
2-3 orange, red or yellow peppers, sliced
1-2 tbsp olive or rapeseed oil
1 tin black beans, drained
8 tortillas
Guacamole, sour cream (or Greek yoghurt), tomato salsa, grated Cheddar, chopped coriander, shredded lettuce - to serve


Method:

1. First make the spice mix by adding the cumin, chilli powder and paprika to a small bowl or jar and stirring or shaking well to combine
2. Put the chicken in a bowl and add about half of the spice mix. Mix well.
3. Put the onion and pepper in another bowl and add the rest of the spice mix. Mix well. If you have time, let this sit for a little while.
4. Heat up a wok or large frying pan, add 1 tbsp oil and when hot, add the chicken and stir fry for a few mins until cooked through. Remove from the pan and keep warm.
5. Stir fry the peppers and onion, adding a little more oil if needed, until softened, then tip in the beans and cook gently for a minute or two to warm them through before returning the chicken to the pan. 
6. Warm the tortillas according to the pack instructions. Make sure the chicken is piping hot before transferring the contents of the pan to a bowl and taking it all to the table.
