A tasty pasta dish with broccoli, anchovies and chilli

Pasta with broccoli anchovies garlic and chilli


I love it when I find a new healthy midweek dinner option and this one is super tasty thanks to the chilli, garlic and anchovies. And of course, pasta is also really quick to cook, so it's win:win as far as I'm concerned!

The anchovies add a subtle savoury tastiness rather than full on anchovy flavour, so dont worry if you're not a huge fan.

Ingredients:

350g penne pasta
1 1/2 medium heads broccoli
2 cloves garlic
1 medium red chilli
1 small tin anchovies
olive oil
parmesan cheese


Method:

1. Put a big pan of water on to boil for the pasta
2. Trim the broccoli and chop into 1cm pieces - chop through the florets and cut the stem into fat matchsticks
3. Peel the garlic, deseed and slice the chilli, drain the anchovies. Finely mince these all together.
4. Heat a large frying or sauté pan and add a couple of tablespoons of olive oil. Add the chilli/garlic/anchovy mix and cook stirring for a minute or two - the anchovies will start to melt in the oil
5. Tip in the broccoli and give it all a good stir
6. Cook the pasta until al dente
7. Meanwhile, stir the broccoli occasionally and a few mins before the pasta's ready, add a ladle of the cooking water to the broccoli
8. Drain the pasta and mix together with the broccoli and about 4tbsp of grated parmesan cheese. Add a little more olive oil if you like.
